Amaranth may be the most important and delicious plant you've never heard of. It’s been cultivated for thousands of years across the world and could be a major player in the future of food security, but, despite its many virtues, few Americans are familiar with it. Caleb Leech, BBG's Herb Garden curator, and Ariel Nadelberg, Terrace Café chef, know amaranth’s extraordinary qualities, though, and recently spoke with All Things Considered host Amy Eddings about it in WNYC’s studio for the popular Last Chance Foods segment. This versatile plant has an edible leaf, stalk and stem, is easy to grow and cook, and is highly nutritious. (The seeds have as much protein as fish!)
